Everything’s White Chocolate Cupcakes

I made these cupcakes for a friend whose favorite flavor is white chocolate. The cupcake has white chocolate and the frosting has white chocolate. So basically, everything’s white chocolate!

Here are the ingredients that you will need for the White Chocolate cupcakes:

3/4 Cup Sugar
1/2 Cup Butter
2 Eggs
1 cup of white chocolate chips, melted
1 3/4 Cups Flour
1 tsp Baking Powder
1/2 tsp Salt
1 tsp of vanilla extract
1 cup of sour cream
1/2 cup of white chocolate chips, not melted

Preheat oven to 325 degrees

-Line a cupcake pan with cupcake liners. I made mini cupcakes. This batch makes approximately 48 mini cupcakes.
-Cream together the butter and the sugar until fluffy.
-Add in the eggs and mix until well combined.
-Melt 1 cup of white chocolate chips in the microwave on high for 30 seconds. Keep a close eye on it so that it doesn’t burn.
-30 seconds should be enough. Stir for 1 minute so that the chips can completely melt together.
-Pour the white chocolate into the batter. Add the vanilla and mix.
-Add the flour, salt and baking powder.
-Add one cup of sour cream and mix.
-Fill each mini cupcake liner about ¾ full with batter.
-Bake for 20 minutes at 325 degrees or until a toothpick inserted in the center comes out clean.

The sour cream makes the cupcake moist. You should have at least one or two white chocolate chip morsels in every cupcake.

To make the white chocolate frosting, you will need:

1 cup of unsalted butter, at room temperature
3 cups of powdered sugar
1 teaspoon of vanilla extract
1/2 cup of melted white chocolate chips

-Beat the butter and melted white chocolate chip for at least one minute.
-Add vanilla extract and beat for another minute.
-Add powdered sugar, one cup at a time, while beating.
-Place in piping bag and pipe onto cupcakes.
